Cuisine on Saint Barthelemy : DiscoverVous êtes ici : West Indies> Saint Barthelemy> Discover : Cookery Discover Saint Barthelemy : CuisineCreole cuisine does not hold a preponderant place on the menus, with the exception of a restaurant or two. The island’s clientele is varied and international, and they often prefer to indulge in the pleasures of French or Italian culinary delights instead of the more simple pleasures of a goat colombo. Definitely not to miss: the crayfishThis spiky crustacean with its long antennae is the king, even though if it were up to him, he would probable trade this title with anyone willing to take it… The crayfish is on every menu, and breeders compete in offering exceptional quality. It is proposed in a great variety of sauces in practically all gastronomic restaurants on the island. Legend has it, though, that not so long ago this charming reddish animal was considered “poor man’s bread”, and was eaten by fishermen only when fish were scarce and hard to find!
